How to beat: Umbra
An umbra can be defeated with a silver sword, ideally coated in Specter oil. You can also avoid the fight entirely by forgiving the knight in the hermit's name, which frees his spirit.
About
Umbras are specters from Blood and Wine that remain invisible even to witchers and can only be seen with strong hallucinogens such as graytop, or by some animals like horses. They can take on any form. The one Geralt meets in Toussaint is the ghost of a knight tormented by an evil deed, who appears to a hermit as a horse and drains her life while seeking her forgiveness.
